Noah and I made the mistake of telling our tour guide that we hadn’t really found food in Thailand that spicy and that we have had more spicy food at home. He laughed at us and encouraged us to eat at his Mams restaurant but when we ordered the food we needed to ask for Thai spice. We eagerly agreed, and took his recommendation of papaya salad and Thai basil chicken. Ordering exactly as he told us to. When the chef came over to ask if everything was ok with our meal, we had to blink the tears away, say yes on the inhale and constantly sip water on the exhale as it really did feel like we were breathing fire. Never underestimate Thai spice.
